Hummus & Veggies
Ingredients
400gm chickpeas, washed & drained
2 tbsp tahini, unhulled preferably 100ml extra virgin olive oil
1 fresh lemon, squeezed
1⁄4 cup water, filtered
1 tsp cumin
1 tsp paprika
2 garlic cloves, crushed
coriander leaves, finely chopped pine nuts, roasted
salt and pepper to taste
For Veggie Sticks
1 cucumber, chopped
1 carrot, chopped
1 celery stalks, chopped
Method
Blitz all the ingredients in a blender, until smooth (or desired consistency).
Serve into a small bowl.
Drizzle with additional olive oil (optional).
Garnish with pine nuts and coriander.
