Hummus & Veggies

Bowl of hummus drizzled with oil & coriander

Ingredients

  • 400gm chickpeas, washed & drained

  • 2 tbsp tahini, unhulled preferably 100ml extra virgin olive oil

  • 1 fresh lemon, squeezed

  • 1⁄4 cup water, filtered

  • 1 tsp cumin

  • 1 tsp paprika

  • 2 garlic cloves, crushed

  • coriander leaves, finely chopped pine nuts, roasted

  • salt and pepper to taste

    For Veggie Sticks

  • 1 cucumber, chopped

  • 1 carrot, chopped

  • 1 celery stalks, chopped

Method

  • Blitz all the ingredients in a blender, until smooth (or desired consistency).

  • Serve into a small bowl.

  • Drizzle with additional olive oil (optional).

  • Garnish with pine nuts and coriander.
