Orange almond cake

Ingredients

  • 3 eggs

  • 1/3 cup extra virgin olive oil

  • 2 oranges, zested & juiced

  • ¼ cup honey or maple syrup

  • 2 cups almond flour

  • 2 tsp baking soda

  • 2 oranges, finely sliced

  • Drizzle of honey or maple syrup

Method

  • Preheat the oven to 180 degrees celcius.

  • In a medium bowl, whisk the eggs until frothy. Pour in the olive oil, orange zest and juice, and honey. Mix well.

  • In a separate medium bowl, mix the almond flour and baking soda.

  • Slowly fold in the dry ingredients into the wet ingredients until combined well. Set aside.

  • Line the cake tin with baking powder. Grease all sides with a drizzle of olive oil.

  • Drizzle honey onto the bottom of the tin. Arrange the orange slices to the bottom.

  • Pour the cake mixture into the tin and spread evenly.

  • Place the tin in the oven and bake for 30 minutes.

  • Leave to cool completely, before flipping the tin over and removing.
