Orange almond cake
Ingredients
3 eggs
1/3 cup extra virgin olive oil
2 oranges, zested & juiced
¼ cup honey or maple syrup
2 cups almond flour
2 tsp baking soda
2 oranges, finely sliced
Drizzle of honey or maple syrup
Method
Preheat the oven to 180 degrees celcius.
In a medium bowl, whisk the eggs until frothy. Pour in the olive oil, orange zest and juice, and honey. Mix well.
In a separate medium bowl, mix the almond flour and baking soda.
Slowly fold in the dry ingredients into the wet ingredients until combined well. Set aside.
Line the cake tin with baking powder. Grease all sides with a drizzle of olive oil.
Drizzle honey onto the bottom of the tin. Arrange the orange slices to the bottom.
Pour the cake mixture into the tin and spread evenly.
Place the tin in the oven and bake for 30 minutes.
Leave to cool completely, before flipping the tin over and removing.
